Recipe
I like Polish Flaki (Tripe Soup) a lot, so I have at least three recipes that simulate it without actually using tripe. This is one of them. I thought it may be attractive to those that would not even consider eating tripe. This recipe was inspired by one of my friends, who often goes mushroom hunting and prepares similar soup.
Ingredients
| 1.5 lb | Oyster mushrooms |
| 3 l | Broth: you can make your own, or use one from the carton, or use bullion cubes, or other concentrate. |
| 3 tbsp | Olive oil |
| 4 tbsp | Butter |
| 1 | Large carrot, cut into short julienne pieces (For hints on this see Note below ingredients in the Calamari a la Flaczki recipe) |
| 1 | Large onion chopped |
| 1 | About 10 cm-long white portion of a leak, cut in half then thinly sliced |
| 1 | Celery stick, thinly sliced, or equivalent amount of celery root, julienned |
| to taste | salt |
| 2 – 4 tbsp | Marjoram leaves |
| 1 tsp | Hot Hungarian paprika (flat tsp may be to spicy for some people, use to your taste, you can always add more at the end of cooking; remember that it takes some time to develop full punch). |
| 1-2 tbsp | Sweet Hungarian paprika, or more |
Directions
- Prepare broth base first. You can clean and slice mushrooms while the broth is slowly boiling and absorbing vegetables and spices
- Melt butter in a frying pan, with addition of olive oil
- Add onions and some salt and saute until translucent.
- Add carrots and saute for 2 – 3 minutes
- Add chopped leaks and celery sticks and continue sauteing until all vegetables are soft
- In a large pot bring broth to boil and and reduce heat to low
- Add the sauteed vegetables and spices, and simmer until the broth becomes well seasoned.
- Clean the mushrooms then cut them or tear them into narrow strips. make sure to cut the stiff stalk at least in half.
- Once the broth is ready, add mushrooms and cook until soft and fully cooked (about 15 minutes)..
- Replace any evaporated water. Check and add salt and spices if necessary.
- Serve with bread or fresh rolls.
